Brian's Parsley Dumplings
Ingredients

4oz plain flour

A good pinch of salt

2 level teaspoons baking powder

1 oz of sunflower margarine

1 egg

1 teaspoon of dried parsley. (If fresh parsley put plenty in.)
Method

Mix together flour salt and baking powder.

Rub margarine into the dry ingredients until it resembles dry breadcrumbs.

Beat egg and add parsley and stir into breadcrumb mixture with a flat bladed knife. You may need a small amount of milk depending on the egg. The mixture has to be workable but not too soft.

Form into small balls about the size of a 50p piece and roll in flour.

Drop into hot stew in a casserole dish replace the lid and place in oven at 200C for 20 mins.
Can be cooked in a pan on the top of the cooker with the lid on but you must be careful not to let the stew/casserole burn.
